  • 1/2 cup powdered sugar
  • 2 tablespoons granulated sugar
  • 1 teaspoon grated orange or lemon zest
  • 1 box refrigerated pie crusts
  • Turbinado sugar and ground cinnamon for sprinkling
  • Toppings: miniature chocolate chips or chopped pistachios

Instructions

  1. Preheat the oven to 425°F.
  2. Unroll pie crusts on a floured surface and sprinkle with turbinado sugar and cinnamon.
  3. Roll gently, then cut circles using a cookie cutter. Press each circle into greased mini muffin tins.
  4. Bake for about 10 minutes until golden brown; cool in pans before transferring to wire racks.
  5. Beat ricotta, powdered sugar, granulated sugar, zest, and vanilla until creamy. Transfer to a zip-top bag and chill.
