  • 1/3 cup melted butter
  • 1/4 cup granulated sugar
  • 2 tbsp powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In one bowl, combine flour and baking powder. In another bowl, cream together softened butter and sugar until fluffy.
  3. Add eggs one by one, then mix in vanilla and buttermilk.
  4. Gradually combine dry ingredients into the wet mix until just incorporated.
  5. Gently fold in chopped rhubarb.
  6. For the streusel topping, mix flour, melted butter, and sugar until crumbly.
  7. Pour batter into the prepared pan, sprinkle streusel on top, and bake for about 55 minutes or until a toothpick comes out clean.
