  • 2 lbs chicken thighs
  • 3 ripe tomatoes
  • 1 red bell pepper
  • 1 habanero pepper (adjust to taste)
  • 1 onion
  • 1/2 cup olive oil
  • 1 cup chicken stock
  • 1 tsp bouillon powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp curry powder
  • 1/2 tsp salt

Instructions

  1. Wash and pat dry chicken thighs. Rub with salt and black pepper; let marinate while preparing other ingredients.
  2. Heat olive oil in a heavy-bottomed pot over medium heat. Brown the marinated chicken thighs for about 10 minutes on each side until golden.
  3. Chop half an onion; set aside the rest. Blend chopped tomatoes, red bell pepper, habanero, and remaining onion until smooth.
  4. In the same pot, sauté chopped onion until translucent. Add blended mixture; boil for 5 minutes.
  5. Return browned chicken to the pot along with chicken stock and spices; stir well.
  6. Cover and simmer for about 20 minutes until chicken is cooked through.
