  • 1 cup shredded coconut
  • 5 dates
  • 1.5 cups full-fat coconut cream
  • 1 cup blueberries
  • 1/4 cup maple syrup
  • 1 Tbsp Earl Grey tea

Instructions

  1. Prepare the crust by blending almonds, shredded coconut, dates, and a pinch of salt in a food processor until sticky. Press into a tart tin and chill.
  2. For the filling, warm coconut cream in a saucepan and mix in mashed blueberries, maple syrup, Earl Grey tea, corn starch, agar-agar, and vanilla until thickened.
  3. Pour the filling into the chilled crust and refrigerate overnight to set.
