  • 1 ½ cups old-fashioned rolled oats
  • ¼ cup oat flour
  • ⅓ cup protein powder
  • ¼ cup melted coconut oil
  • ¼ cup maple syrup or honey
  • 1 tsp vanilla extract
  • 2 – 4 tbsp mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a large bowl, mix rolled oats, oat flour, protein powder, and salt.
  3. In another bowl, whisk together maple syrup (or honey), brown sugar, melted coconut oil, and vanilla.
  4. Combine wet and dry mixtures until fully incorporated; it should resemble cookie dough.
  5. Press the mixture evenly into the prepared loaf pan.
  6. Bake for 10-12 minutes until lightly golden at the edges.
  7. Let cool before cutting into bars.
