  • 4 cups chicken stock
  • 1 medium onion, chopped
  • 1 cup heavy whipping cream
  • 4 to 5 ounces fresh spinach
  • 1 cup sun-dried tomatoes
  • 1/2 cup freshly shredded parmesan cheese
  • 1 tablespoon sun-dried tomato oil
  • 1/3 cup tomato paste
  • 1 teaspoon red chili flakes
  • 5 garlic cloves, minced
  • 1/4 cup fresh basil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper

Instructions

  1. In a large pot, heat the sun-dried tomato oil over medium heat. Sauté the onion until translucent, about 3–4 minutes. Add minced garlic and cook for an additional minute.
  2. Pour in chicken stock and bring to a gentle boil. Stir in the paneer pasta and cook according to package instructions (10–12 minutes).
  3. Once al dente, reduce heat and mix in heavy cream along with tomato paste, red chili flakes, kosher salt, and black pepper.
  4. Add fresh spinach and sun-dried tomatoes; gently fold until the spinach wilts (about 2–3 minutes).
  5. Remove from heat and stir in parmesan cheese until melted. Garnish with fresh basil before serving.
