  • 1 (9-inch) pie crust (homemade or refrigerated)
  • 2 fresh peaches, thinly sliced
  • 1 cup fresh blackberries
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground ginger
  • 1/8 tsp freshly ground nutmeg
  • 3 tbsp cornstarch
  • 1 egg, lightly beaten
  • Turbinado sugar for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a baking pan with parchment paper.
  2. Roll out the pie crust into a large circle and place it onto the prepared baking pan.
  3. In a mixing bowl, combine sliced peaches and blackberries with granulated sugar, brown sugar, spices, and cornstarch.
  4. Spread the fruit mixture onto the center of the pie crust, leaving a 2-3 inch margin around the edge. Dot with butter.
  5. Fold the edges of the crust over the fruit filling and brush with egg wash. Sprinkle Turbinado sugar on top.
  6. Chill in the freezer for one hour before baking.
  7. Bake in the preheated oven for about one hour until golden brown. Let cool for at least 15 minutes before slicing.
