  • 2 large poblano peppers, chopped
  • 1 rotisserie chicken, shredded
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can white beans, drained and rinsed
  • 1 small can green chiles
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon oregano
  • 1 to taste salt
  • 1 to taste black pepper
  • Juice of 1 lime
  • ½ cup heavy cream or sour cream (optional)

Instructions

  1. Roast the chopped poblano peppers in a hot pan until slightly charred.
  2. Heat oil in a large pot over medium heat; sauté the diced onion until translucent and add minced garlic until fragrant.
  3. Stir in shredded rotisserie chicken and drained white beans.
  4. Pour in chicken broth, followed by cumin, smoked paprika, oregano, salt, and pepper. Mix well.
  5. Bring to a gentle boil then reduce the heat and let simmer uncovered for about 30 minutes.
  6. Just before serving, stir in lime juice and optional heavy cream or sour cream.
