  • 8 pieces chicken drumsticks and thighs
  • 1 tbsp olive oil
  • 1 large yellow onion (chopped)
  • 1 bell pepper (chopped)
  • 4 garlic cloves (minced)
  • 2-3 tbsp tomato paste
  • 3-4 cups chicken broth
  • 5 small potatoes (cubed)
  • Fresh herbs: parsley, thyme, bay leaves
  • Seasonings: adobo, paprika, salt

Instructions

  1. Clean the chicken using lemon juice and vinegar; pat dry.
  2. Marinate chicken in olive oil, garlic powder, onion powder, adobo, paprika, salt, and pepper for at least 2 hours (preferably overnight).
  3. In a large pot over high heat, brown the marinated chicken in olive oil until golden; set aside.
  4. In the same pot, sauté onions, bell peppers, and minced garlic until softened. Stir in tomato paste and chicken broth; cook for 3 minutes.
  5. Add herbs and return browned chicken to the pot. Simmer on low heat for about 30 minutes.
  6. Add cubed potatoes and cook an additional 10 minutes until tender.
