Instructions

  1. In a food processor, combine shredded coconut, raspberries, rolled oats, sunflower seeds (or pumpkin seeds), coconut flour, coconut oil, and protein powder (if using). Blend until smooth and sticky.
  2. Use a cookie scoop to portion out the mixture, rolling each portion into a ball with your hands.
  3. Roll each ball in shredded coconut to coat evenly.
  4. Refrigerate for about 30 minutes to firm up before storing in an airtight container.
