  • 16 ounces Italian sausage
  • 1 tablespoon Italian seasoning
  • 2 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 18 ounce package refrigerated cheese/spinach ravioli
  • 2 cups fresh chopped spinach
  • 1 cup heavy cream
  • Kosher salt
  • fresh cracked pepper
  • shaved Parmesan
  • fresh chopped parsley

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Sauté diced onion with a pinch of salt and pepper for about 3–4 minutes until softened.
  3. Add minced garlic and Italian seasoning, cooking for 30 seconds until fragrant.
  4. Stir in tomato paste for one minute before adding crumbled Italian sausage; cook until browned.
  5. Incorporate chicken broth, crushed tomatoes, and ravioli with additional salt and pepper.
  6. Bring to a simmer, then reduce heat and cook for 3–5 minutes until ravioli is al dente.
  7. Stir in fresh spinach and heavy cream until warmed through; adjust seasoning if needed.
  8. Garnish with shaved Parmesan and parsley before serving.
