  • 1-2 large baking potatoes (washed and cubed)
  • 2 tablespoons olive oil (divided)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 7 oz (200 g) block of feta cheese
  • 1 head of garlic (top sliced off)
  • 1 tablespoon honey
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine cubed potatoes with 1 tablespoon olive oil, thyme, oregano, salt, and pepper.
  3. Spread the seasoned potatoes on a baking sheet in a single layer.
  4. Place the block of feta in the center, surrounding it with the garlic head and drizzle everything with the remaining olive oil.
  5. Cover loosely with aluminum foil and roast for about 30 minutes. Remove the foil and roast for another 20 minutes until golden brown.
  6. Drizzle honey over the potatoes and feta before garnishing with chopped basil.
