Ingredients

Scale
  • 1 pound Italian sausage (mild or hot)
  • 5 tablespoons unsalted butter (divided)
  • 4 cups chopped baby gold potatoes
  • 2-1/4 cups mirepoix (diced carrots, celery, and onion)
  • 3 cups milk (1%, 2%, or whole)
  • 6 tablespoons flour
  • 2 cups shredded extra-sharp Cheddar cheese
  • 4 cups chicken stock

Instructions

  1. In a large pot over medium-high heat, brown the Italian sausage until fully cooked and crumbled. Remove and set aside.
  2. In the same pot, melt one tablespoon of butter and sauté mirepoix until tender. Add garlic and cook briefly.
  3. Stir in the chopped potatoes, seasonings, and chicken stock; bring to a boil then simmer until potatoes are fork-tender.
  4. While the potatoes cook, create a creamy mixture by melting remaining butter in a medium pot. Whisk in flour, then gradually add milk until thickened; stir in heavy cream.
  5. Combine the creamy mixture with the potato soup and fold in the shredded cheese and sausage until melted.
  6. Serve warm with optional toppings like sour cream or fresh herbs.
