  • 2 cans (10.5 ounces each) condensed cream of chicken soup
  • 1 can Rotel tomatoes and green chiles
  • 1 can (15 ounces) black beans (drained and rinsed)
  • 1 ½ cups canned or frozen corn
  • 2 boneless, skinless chicken breasts
  • Corn tortillas
  • Shredded cheddar cheese

Instructions

  1. In a 6-quart slow cooker, combine Pace Picante Sauce, cream of chicken soup, Rotel tomatoes, black beans, corn, cumin, hot sauce, and water.
  2. Add halved chicken breasts to the mixture.
  3. Cover and cook on LOW for about 4 hours.
  4. After cooking time is complete, shred the chicken in the pot using two forks.
  5. Stir in cut corn tortillas and shredded cheddar cheese; cover and cook on LOW for an additional 15 minutes.
  6. Before serving, stir in fresh cilantro and add optional toppings like sour cream or olives.
