  • 2 cups graham cracker crumbs
  • 8 Tbsp unsalted butter (melted)
  • 2 lb cream cheese (room temperature)
  • 1 cup granulated sugar
  • 5 large eggs (room temperature)
  • 1/4 cup sour cream
  • 1/2 Tbsp vanilla extract
  • 1 lb fresh strawberries (sliced)

Instructions

  1. Preheat oven to 325°F (160°C). Mix graham cracker crumbs, melted butter, and sugar. Press into a springform pan and bake for 10 minutes.
  2. Beat cream cheese until smooth; add sugar gradually. Mix in eggs one at a time. Stir in sour cream and vanilla.
  3. Pour filling over cooled crust and bake for about 90 minutes until slightly jiggly in the center. Cool in the oven for an hour.
  4. Combine sliced strawberries with sugar and lemon juice; let sit for 30 minutes.
  5. Spread strawberry topping over chilled cheesecake and refrigerate for at least six hours before serving.
