  • 4 large eggs + 1 yolk
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1 tablespoon vanilla extract
  • 6 cups water (for the water bath)
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 2 pounds fresh strawberries, hulled and finely chopped, divided

Instructions

  1. Preheat oven to 350°F (175°C) and line the bottom of a springform pan with parchment paper.
  2. Mix graham cracker crumbs, melted butter, and sugar; press into the pan.
  3. Bake crust for 8 minutes until golden brown; cool.
  4. Beat cream cheese until smooth; add sugar and cornstarch.
  5. Incorporate eggs one at a time; then mix in sour cream and vanilla until just combined.
  6. Pour filling into crust; set in a roasting pan filled halfway with water.
  7. Bake at 400°F (200°C) for 10 minutes, then reduce to 230°F (110°C) for an hour.
  8. Cool in the oven with the door ajar for one hour before refrigerating overnight.
  9. Prepare strawberry sauce by cooking half strawberries with sugar and lemon juice until thickened; cool before serving.
