  • 100 g granulated sugar
  • 100 g brown sugar
  • 2 large eggs (room temperature)
  • 330 g milk (room temperature)
  • 250 g cream cheese (softened to room temperature)
  • 115 g unsalted butter (softened to room temperature)
  • 100 g powdered sugar
  • 70 g strawberry jam (from above)
  • 1 teaspoon vanilla extract
  • 200 g strawberries (finely diced)
  • 7 strawberries (halved for decoration)

Instructions

  1. Prepare the strawberry filling by cooking strawberries, granulated sugar, and water until jam-like. Cool before use.
  2. Preheat your oven to 350°F (175°C) and grease two round baking pans.
  3. Mix dry ingredients: flour, cocoa powder, baking powder, baking soda, and salt.
  4. Combine wet ingredients: melted butter, oils, sugars, eggs, and milk until smooth.
  5. Gradually mix dry into wet ingredients until just combined.
  6. Bake for 25-30 minutes until a toothpick inserted comes out clean; cool on racks.
  7. For frosting, beat cream cheese and butter until smooth; add powdered sugar, vanilla, and cooled strawberry jam until fluffy.
  8. Assemble the cake with layers of filling and frosting; decorate with fresh strawberries.
