  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 24 ounces (3 blocks) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • ¼ cup heavy cream

Instructions

  1. Prepare the strawberry sauce by simmering strawberries, sugar, and lemon juice until softened. Mash into a puree and thicken with cornstarch slurry.
  2. Preheat the oven to 325°F (160°C).
  3. Make the crust by mixing graham cracker crumbs, sugar, and melted butter; press into a springform pan and bake for 8-10 minutes.
  4. Beat cream cheese and sugar until smooth; add eggs one at a time, then mix in vanilla, sour cream, and heavy cream until combined.
  5. Pour the filling over the cooled crust; swirl in cooled strawberry sauce.
