  • 1 lb. lean ground beef
  • 1 tablespoon olive oil, divided
  • 1/2 medium yellow onion, diced (about 1/2 cup)
  • 2 cloves garlic, minced
  • 1 red bell pepper, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 (14.5 oz.) cans diced tomatoes
  • 1 (15 oz.) can tomato sauce
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon sugar, or to taste (optional)
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 cups cooked long grain white rice
  • 2 tablespoons fresh Italian parsley, chopped
  • Shredded cheddar or mozzarella cheese, for serving (optional)

Instructions

  1. In a Dutch oven over medium heat, brown the ground beef until fully cooked. Drain excess grease and set aside.
  2. In the same pot, sauté diced onions and chopped bell peppers in olive oil until soft. Add minced garlic and sauté for an additional 30 seconds.
  3. Return the beef to the pot and mix in diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, and seasonings. Bring to a boil.
  4. Reduce heat to medium-low and simmer for 15–20 minutes.
  5. Stir in cooked rice (if serving immediately) or keep rice separate for leftovers. Garnish with parsley before serving.
