  • 3/4 cup brown sugar (packed)
  • 1 cup granulated sugar

  • 1 and 1/2 tablespoons cinnamon
  • 1/3 cup granulated sugar (for rolling)

  2. Form small balls of filling about the size of marbles and freeze for about 20 minutes.
  3. Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  4. For the dough, beat softened butter until smooth, add granulated sugar, then mix in eggs and vanilla.
  5. Combine dry ingredients (flour, baking soda, kosher salt, cream of tartar) in another bowl; gradually fold into the wet mixture.
  6. Gently incorporate frozen filling balls into the dough.
  7. Use a cookie scoop to form dough balls, roll in cinnamon-sugar mixture, and place on prepared sheets.
  8. Bake for 11-12 minutes until slightly underbaked; reshape warm cookies if needed.
  9. Cool on the pan for at least five minutes before transferring to a wire rack.
