  • 2 cans Great Northern beans (drained and rinsed)
  • 2 cups fresh baby spinach
  • ½ cup heavy whipping cream
  • garlic
  • tomato paste
  • Italian seasoning
  • crushed red pepper
  • black pepper

Instructions

  1. In a large Dutch oven over medium-high heat, brown the sausage for about 10-15 minutes, breaking it apart with a wooden spoon.
  2. Reduce heat to medium and add onion, celery, and carrots; sauté until onions soften (3-5 minutes), then stir in garlic and cook for another minute.
  3. Mix in tomato paste, Italian seasoning, crushed red pepper, and black pepper.
  4. Pour in chicken broth and beans; bring to a simmer for about 6-7 minutes until vegetables soften.
  5. Add heavy cream and spinach; cook until spinach wilts down (about 5 minutes).
  6. Serve warm in bowls garnished with chopped parsley.
