  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 1/4 cups whole milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 4 egg yolks
  • 1 pint fresh strawberries
  • 1 tablespoon apricot jam (for glazing)

Instructions

  1. Prepare the crust by mixing flour, powdered sugar, and salt. Cut in butter until crumbly. Add egg yolk and ice water; mix until dough forms. Chill for 30 minutes.
  2. Preheat oven to 375°F (190°C). Roll out chilled dough, fit into tart pan, prick bottom, line with parchment paper, and bake for 15-20 minutes until golden brown. Cool completely.
  3. For the custard, heat milk, cream, and sugar in a saucepan. In another bowl, whisk egg yolks and cornstarch; gradually add hot milk mixture while whisking. Return to saucepan and cook until thickened.
  4. Pour custard into cooled crust and arrange sliced strawberries on top.
  5. Brush with melted apricot jam for glaze and refrigerate for at least one hour before serving.
