  • 3 large eggs
  • 1¾ cups milk
  • ½ cup water
  • 3 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1½ cups heavy cream
  • ½ cup speculoos cookie butter
  • ¼ cup powdered sugar

Instructions

  1. Whisk together the flour, eggs, milk, water, melted butter, vanilla extract, and salt until smooth. Chill the batter for at least 30 minutes.
  2. Heat a nonstick pan over medium heat and pour in half a ladle of batter to form a thin crêpe. Cook for 1–2 minutes on each side until lightly golden. Repeat with remaining batter and cool completely.
  3. In a mixing bowl, combine speculoos cookie butter, powdered sugar, and vanilla extract; beat until smooth. Gently fold in whipped heavy cream until fully mixed.
  4. Layer the cooled crêpes on a plate, spreading 2–3 tablespoons of filling between each layer until all crêpes are used.
  5. Chill the assembled cake for at least two hours before serving.
