  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 2 stalks celery (diced)
  • 2 medium carrots (diced)
  • 2 pounds potatoes (chopped)
  • 4 cups vegetable broth
  • 1/3 cup dairy-free cream
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pot over medium heat. Sauté diced onion for 3 minutes until translucent, then add minced garlic, celery, carrots, and potatoes. Sauté for another minute.
  2. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for about 20 minutes until vegetables are tender.
  3. Blend half of the soup until smooth using an immersion blender or regular blender.
  4. Return blended soup to the pot, stir in dairy-free cream, and adjust seasonings as needed.
  5. Serve hot, garnished with fresh parsley.
