Zuppa Toscana, a beloved Olive Garden copycat recipe, is the ultimate comfort soup that transports you to Italy with every spoonful.

Ingredients

  • 1 pound ground spicy Italian sausage
  • 3 garlic cloves, minced
  • 1 medium white onion, diced
  • 1.5 pounds Yukon Gold potatoes, diced
  • 5 to 6 cups chicken stock
  • 2 to 3 cups chopped fresh kale
  • 1 cup heavy whipping cream
  • Salt and pepper to taste
  • 6 pieces cooked bacon, crumbled

Instructions

  1. In a large stockpot over medium-high heat, cook the ground sausage until browned. Remove with a slotted spoon and set aside, reserving some grease.
  2. Sauté the diced onion in the reserved grease for about 5 minutes; add minced garlic and cook for another minute.
  3. Add the diced potatoes and chicken stock; bring to a simmer and cook until potatoes are tender (about 10 minutes).
  4. Stir in kale and heavy cream; simmer for another 5 minutes. Season with salt and pepper.
  5. Serve warm topped with crumbled bacon.
