  • 1 pound ground spicy Italian sausage
  • 3 garlic cloves, minced
  • 1 medium white onion, diced
  • 1.5 pounds Yukon Gold potatoes, diced
  • 5 to 6 cups chicken stock
  • 2 to 3 cups chopped fresh kale
  • 1 cup heavy whipping cream
  • Fine sea salt and freshly-ground black pepper
  • 6 pieces bacon, cooked and crumbled

Instructions

  1. Cook the sausage in a large stockpot over medium-high heat until browned. Remove with a slotted spoon and reserve some grease.
  2. Sauté onions in the reserved grease for about 5 minutes, then add garlic and cook for another minute.
  3. Stir in potatoes, chicken stock, and cooked sausage; bring to a simmer.
  4. Reduce heat and cook until potatoes are tender (about 10 minutes). Add kale and cream; simmer an additional 5 minutes.
  5. Season with salt and pepper to taste before serving topped with crumbled bacon.
