  • 4 medium potatoes (diced)

  • 3 cloves garlic (minced)
  • 6 cups chicken broth
  • 1 bunch kale (chopped)
  • 1 cup heavy cream
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Olive oil (for sautéing)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add Italian sausage, breaking it apart while cooking until browned (5–7 minutes). Drain excess fat if necessary.
  2. Add diced onion; sauté for 3–4 minutes until softened. Stir in minced garlic and cook for another minute.
  3. Incorporate diced potatoes and pour in chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender (about 15 minutes).
  4. Add chopped kale and red pepper flakes (if using). Cook for an additional 5 minutes.
  5. Lower the heat and stir in heavy cream; season with salt and pepper to taste. Warm through for another 2–3 minutes before serving.
