500 grams of fresh fish fillets (salmon, tilapia, or cod)

2 tablespoons of oil (vegetable or coconut oil)

1 large onion, finely chopped

4 cloves of garlic, minced

1-inch piece of ginger, grated

1012 curry leaves

1 teaspoon of turmeric powder

1 teaspoon of cumin powder

1 teaspoon of coriander powder

1 teaspoon of red chili powder (adjust according to spice preference)

1 teaspoon of garam masala

Salt to taste
2 cups of water
Fresh coriander leaves for garnish


  1. Clean the fish fillets and cut them into desired-sized pieces.
  2. Marinate the fish with turmeric powder, red chili powder, and salt for 15-20 minutes.
  3. Heat oil in a large pan over medium heat.
  4. Sauté chopped onion until golden brown.
  5. Add minced garlic, grated ginger, and curry leaves. Sauté for another minute.
  6. Mix in turmeric powder, cumin powder, coriander powder, red chili powder, and garam masala.
  7. Gently place the marinated fish pieces into the pan and coat them with the spice mixture.
  8. Pour in water, ensuring the fish pieces are fully submerged.
  9. Season with salt according to taste.
  10. Cover the pan and let the gravy simmer on low heat for 10-15 minutes, or until the fish is cooked through and the flavors have melded together.
