  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ cup unsalted butter, chilled and cubed
  • ½ cup cold water (or more as needed)
  • 2 cups fresh or canned fruit (chopped)
  • ½ cup granulated sugar (to taste)
  • Vegetable oil (for frying)

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and baking powder. Cut in chilled butter until crumbly. Gradually add cold water until dough forms.
  2. Turn the dough onto a floured surface and knead gently until smooth. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  3. Prepare fruit filling by cooking chopped fruit with sugar and cornstarch over medium heat until thickened; let cool.
  4. Roll out the chilled dough to about ⅛ inch thick and cut into circles (4–5 inches in diameter).
  5. Place about 1–2 tablespoons of fruit filling on each circle, fold over to seal, and crimp edges with a fork.
  6. Heat oil to 350°F (175°C) in a skillet. Fry filled pies in batches for about 2–3 minutes per side until golden brown.
  7. Drain on paper towels and serve warm.
