2 pounds potatoes (Yukon Gold or Red), peeled and diced
1 cup Hellmann’s Real Mayonnaise
2 celery stalks, finely chopped
1 medium onion, finely chopped
2 hard-boiled eggs, chopped (optional)
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon mustard (optional)
1/4 cup chopped fresh parsley

Instructions

  1. Place the diced potatoes in a large pot and cover with water. Bring to a boil, then reduce heat to a simmer. Cook until the potatoes are tender, about 15 minutes. Drain and let cool slightly.
  2. In a large mixing bowl, combine Hellmann’s mayonnaise, chopped celery, onion, salt, pepper, and mustard if using. Mix until well combined.
  3. Add the cooked potatoes and gently stir until they are well coated with the dressing. Fold in the chopped eggs and parsley.
  4. Refrigerate the potato salad for at least an hour before serving to allow flavors to meld.
