  • ½ cup Celery, diced
  • ½ cup Carrot, diced
  • ½ cup Onion, diced
  • 1 clove Garlic, minced
  • 1 cup Pastina or other small pasta like orzo
  • 4 cups Chicken bone broth
  • ¼ tsp Turmeric
  • ¼ tsp Kosher salt
  • ¼ tsp Fresh ground pepper
  • 2 tbsp Butter (for finishing)
  • ½ cup Parmesan cheese, grated
  • 1 Egg, thoroughly whisked

Instructions

  1. In a large pot, melt the butter over medium heat. Sauté diced onion, carrot, and celery until softened (about 5 minutes).
  2. Add minced garlic and cook until fragrant (about 1 minute).
  3. Pour in chicken bone broth; add turmeric, kosher salt, and pepper.
  4. Bring to a gentle simmer.
  5. Stir in pastina or orzo; cook until al dente according to package instructions.
  6. Remove from heat and stir in grated Parmesan cheese and additional butter until melted.
  7. Allow to cool slightly before slowly incorporating the whisked egg while stirring continuously.
