  • 32 oz chicken broth
  • 1 c water
  • 2 tsp tomato paste
  • 6 oz lasagna noodles, broken into small pieces
  • 1 c frozen spinach
  • 1/4 c cream
  • 4 oz mozzarella cheese, sliced
  • Ricotta cheese
  • Parmesan cheese (optional)

Instructions

  1. Brown ground beef in a large pot over medium heat; drain excess grease.
  2. Add garlic and onion; cook for about 5 minutes until fragrant.
  3. Stir in crushed tomatoes, chicken broth, water, and tomato paste; add broken noodles.
  4. Bring to a boil, then reduce heat and simmer covered for about 10 minutes until noodles are tender.
  5. Stir in spinach and cream; simmer for an additional 5 minutes.
  6. Serve with mozzarella and ricotta cheese on top.
