300g all-purpose flour
60g granulated sugar
1 tsp salt
220g unsalted butter (cold)
110ml cold water
1kg apples (Pink Lady or Fuji)
75g unsalted butter (for filling)
190g brown sugar
1¼ tsp ground cinnamon
1¼ tbsp cornstarch
¼ tsp salt
2½ tsp water
5 tbsp almond flour (or ground nuts or oat flour)
1 egg
1 tbsp water (for egg wash)
3 tbsp brown sugar (for topping)
Instructions
For the crust, mix flour, sugar, and salt in a large bowl. Cut in cold butter until crumbly. Gradually add cold water until dough forms. Wrap in plastic and refrigerate for 30 minutes.
Preheat oven to 180°C (350°F).
For the filling, peel and chop apples. Combine with melted butter, brown sugar, cinnamon, cornstarch, salt, and water; set aside.
Roll out two-thirds of the dough on a floured surface and place in a pie dish. Pour in apple filling.
Cover with remaining rolled-out dough and cut slits for steam to escape.
Bake for about 90 minutes until golden brown and bubbling.
