Ingredients

  • 300g all-purpose flour
  • 60g granulated sugar
  • 1 tsp salt
  • 220g unsalted butter (cold)
  • 110ml cold water
  • 1kg apples (Pink Lady or Fuji)
  • 75g unsalted butter (for filling)
  • 190g brown sugar
  • 1¼ tsp ground cinnamon
  • 1¼ tbsp cornstarch
  • ¼ tsp salt
  • 2½ tsp water
  • 5 tbsp almond flour (or ground nuts or oat flour)
  • 1 egg
  • 1 tbsp water (for egg wash)
  • 3 tbsp brown sugar (for topping)

Instructions

  1. For the crust, mix flour, sugar, and salt in a large bowl. Cut in cold butter until crumbly. Gradually add cold water until dough forms. Wrap in plastic and refrigerate for 30 minutes.
  2. Preheat oven to 180°C (350°F).
  3. For the filling, peel and chop apples. Combine with melted butter, brown sugar, cinnamon, cornstarch, salt, and water; set aside.
  4. Roll out two-thirds of the dough on a floured surface and place in a pie dish. Pour in apple filling.
  5. Cover with remaining rolled-out dough and cut slits for steam to escape.
  6. Bake for about 90 minutes until golden brown and bubbling.
