Ingredients

Scale
  • 1 ½ cups plain flour (225 g)
  • 1 tablespoon baking powder (16 g)
  • 1 cup caster sugar (240 g)
  • ¾ cup melted butter (180 g)
  • 1 ½ cups milk (375 mL)
  • 2 teaspoons vanilla extract (10 g)

Instructions

  1. Preheat your oven to 160°C (320°F) for fan convection or 180°C (355°F) for standard ovens. Grease and line an 8-inch round cake tin.
  2. In a large mixing bowl, sift together the flour and baking powder; whisk in the caster sugar. Create a well in the center.
  3. Pour in the melted butter, milk, and vanilla extract into the well. Whisk until combined; some lumps are okay.
  4. Transfer the batter to your prepared tin and bake for 45-50 minutes or until golden brown and a skewer inserted comes out clean.
  5. Cool in the tin for about 10 minutes before transferring to a wire rack to cool completely.
