  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 egg
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 cups strawberries (diced)
  • 2 Tbsp all-purpose flour (for coating strawberries)
  • 2 cups powdered sugar
  • 2 Tbsp butter (melted)
  • 1/2 cup strawberries (diced for glaze)
  • 1/2 tsp vanilla extract (for glaze)

Instructions

  1. Preheat oven to 350°F and grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together sugar, milk, oil, egg, and vanilla.
  3. Stir in baking powder and salt; gradually mix in flour until just combined.
  4. Coat diced strawberries with flour and gently fold into the batter.
  5. Pour batter into the pan and bake for 50–55 minutes until a toothpick comes out clean.
  6. Cool for 10 minutes before transferring to a wire rack.
  7. For the glaze, combine powdered sugar, melted butter, diced strawberries, and vanilla until smooth.
  8. Drizzle glaze over cooled bread.
