One Pan Spicy Tomato Caper Fish Recipe

One Pan Spicy Tomato Caper Fish Recipe

Ingredients:
- 1 whole white fish ~1.5 to 2lbs
 - 2 small tomatoes, diced
 - 1/2 red onion, minced
 - 2 garlic, minced
 - 2-3 chilis, chopped
 - 2-3 tbsp capers
 - 1/2 lemon, juiced
 - Handful of chopped cilantro
 - 2 tbsp ghee
 - 2 tbsp oil
 
Method:
- Pat dry your fish and generously season with salt and pepper on both aspects and in the cavity.
 - Cut slits on every aspect if using a larger / extra plump fish for simpler cooking.
 - Melt ghee over medium warmness and upload in oil.
 - Pan fry fish for 3 to 4 mins on 1 aspect until golden brown then flip.
 - Add in purple onion, garlic, and chilis and fry till fragrant ~2 mins.
 - Add in tomatoes and capers for some other 2 to three minutes and lightly season with salt
 - Squeeze over lemon juice and upload in wine for every other 2 mins then blend in chopped parsley and serve.
Notes:
For a larger fish you may upload a bit of chook stock so it creates a chunk of steam and close the lid.
